You must have noticed that the yolks in chicken eggs are of different colors - from pale yellow to bright orange.

What does this mean and which yolk is the most useful?

About 100 years ago, scientists discovered that the color of egg yolks depends on the amount of carotenoids in their composition. These antioxidants help in the production of vitamin A, which has a beneficial effect on the strength of our bones.

Therefore, the richer the color of the yolk, the more nutrients it contains. Some large egg farms even use a special scale of 15 different yellow-orange shades to determine the quality of their product.

In general, it is preferable to eat eggs that have bright orange yolks, as they contain the maximum amount of chemicals that our body needs.

Sometimes the pale yolk color is a result of seasonal changes. In winter, the yolk often fades due to the relatively small amount of food available to hens at this time of year. In most cases, however, a pale color is a sign of poor egg quality. Eggs of this kind will not provide you with the nutrients you need.
