Ivan Zvezdev was born on August 12, 1975 in Sofia. By character, he is defined as an independent person. His parents are engineers by education. His childhood is spent in lessons, games and jokes. However, all this ends when he follows his sister Boryana to the "Balkanski" circus. The time spent in the circus of "Bate Sasho", as Alexander Balkanski is called, was for him "barracks before the barracks" because of the strict discipline. He toured many countries with the circus, played in front of thousands of people, including the late Pope John Paul II and the soccer star Diego Maradona

The virtuoso in the kitchen enjoys his wife Juliana and his three children, the youngest of whom bears his name.

The famous culinary wizard is an active participant in the "Take Me to the Village" initiative, as well as in this year's diabetes prevention campaign.

How did you start cooking and why did it become a profession as well as a hobby, Ivan?

- This is the place to say that if I had not become a chef, I probably would have been a musician, although my father was very keen for me to complete an economic education. How did I decide to become a chef? In the circus, I was on a constant diet and always dreamed of delicious and well-prepared food. In the new democratic times, the profession of cook was moving out of the dining room kitchen and was already becoming more respected and dignified, as it had always been in Western Europe. "If I become a good cook, I will be well paid," I told myself.

I worked in several restaurants and after a while opened my own deli. I never liked tripe soup, but people used to visit my place and liked the dishes. Then, although my wife was against it, we left for Córdoba, Argentina. I started working as a chef with quite a lot of success. I found new friends, I was earning well. Argentinians are very friendly people who have great respect for Europeans. That's why I was very respected there and even thought about my own restaurant. My wife, however, could not get used to the country of the pampas and the gauchos. I love and care for my family very much, and that's why we returned to Bulgaria, where we had to fight the crisis for our bread. Now I manage and I don't complain, even our kids get into cooking.

You showed us that we can create miracles in the kitchen without using sugar and high-calorie products - is diabetes a scary thing for you?

- This sweet disease has a way to be controlled with the help of doctors and natural products. It is normal to worry, but we know how we can alleviate our condition. I know many people with diabetes, with high blood pressure, with other serious diseases - with a good diet and physical activity they maintain a satisfactory lifestyle. We can indulge in sweet things by using alternative sweeteners. I stopped putting sugar in my coffee a long time ago, I use coconut sugar.

What foods have you given up for better he alth?

- From no food - I just reduced meat at the expense of fish, prepared in various forms.

What is the Bulgarian superfood for you?

- Garlic - when I get sick, which happens to me too, I make garlic porridge, with yogurt, roasted peppers and some walnuts. With it I remove the sufferings of my throat. 5 cloves of garlic are ground, 200 g of squeezed milk, mixed with 2-3 roasted peppers and sprinkled with ground but previously roasted walnuts. It is an effective natural remedy for sore throat for me.

Are there any good doctors left in Bulgaria?

- Of course, I went to renew my he alth card and in the polyclinic in Mladost quarter I met many perfect doctors, with a good attitude towards patients, people who really love their work. My appendix was operated on in the capital's "St. Anna". I was extremely satisfied and impressed with the state hospital. I thought it would be a bad environment, that's what I read in the media, but I am extremely impressed with the cozy rooms, the doctors were well dressed, clean, neat. At various events, I come into contact with many doctors, from different speci alties, Bulgarian doctors are good specialists.

Do Bulgarians manage to eat he althy?

- Only people in the village eat he althy, otherwise we don't have enough money for quality food. I see how people eat 2-3 pies, a bottle of boza - this is very harmful. This is how they destroy their he alth - we live in a vicious circle and it will be difficult to get out of it. People choose products based on appearance and low price, but their quality is very low. The crooked cucumber is better, and so is the pimply apple.
